Canadian Oriental Ribs

Ingredients

1-1/2 lb. ribs

1/2 cup pure maple syrup

2 tablespoons soy sauce

1/4 cup dry sherry

2 garlic cloves crushed

1 to 2 tbsp finely minced ginger root

2 tablespoons vegetable oil

Directions

To ensure tender ribs, fold them to fit into a large saucepan. Fill pan with enough water to cover ribs completely and bring to a boil. Then simmer, covered, until fork tender, about 30 minutes. Refrigerate if not using right away.

For easy grilling leave rack of ribs in one piece. Meanwhile, prepare marinade by stirring remaining ingredients together in a medium-size saucepan, Bring to a boil over medium heat and boil gently, stirring often, for 5 min. to develop flavours. Drain cooked ribs well.

Preheat barbecue and lightly grease grill. Brush ribs with maple syrup mixture. Place coated ribs on grill about 6 inches from hot coals. Grill, turning ribs every 5 min. and basting with remaining maple syrup mixture, until heated through, about 15 to 20 min. Cut into serving-size pieces.
